3 cups Shredded unsweetened coconut
1/2 cup Coconut oil
1 Tsp Honey
2 Tsp Maple suryp
1 Tsp Vanilla extract
Dash of Salt (I used himalayan pink)
1) Place shredded coconut in food processor. You will be processing the coconut to a fine consistency. This will take time so be patient. As it breaks down it will start to creep up the sides of the bowl. Just stop it and give it a scrap to ensure it gets equal amounts of love
2) Add salt, vanilla, maple syrup, honey and coconut oil. Turn the processor back on until smooth.
Appox time 10-15 mins total
**The longer it runs the smoother the consistency. So if you like it a little more gritty than have at it. Its all up to you! Please check for consistency as you go along. If you feel like the butter is still a little on the dry side then add more oil, by adding the oil your rehydrating the shreds for a creamy butter. You should have 1 full mason jars worth.
